Harold McGee On Food and Cooking: The Science and Lore of the Kitchen (2004)

Bob Warden Great Food Fast : Bob Warden's Ultimate Pressure Cooker Recipes (2012)
Looks to redefine pressure cooking all over again.With the help of thousands of reader reviews, forum posts, and comments, Bob has now created recipes that are highly tuned to what his customers want. The Editors of Cooking Light The All-New Fresh Food Fast: 200+ Incredibly Flavorful 5-Ingredient 15-Minute Recipes (Cooking Light)
I don't really think of fresh food as containing microwaved rice, a precooked chicken from your grocery store, precut onions, canned veg, etc. So I think they mean fresh as in 'not fast food'. If you do use the not so fresh ingredients, most of the recipes fulfill the 15 minutes. Some did extend to 30.
Andrea Nguyen Vietnamese Food Any Day: Simple Recipes for True, Fresh Flavors -
Nguyen cleverly incorporates techniques and ingredients from other parts of the world into her Vietnamese recipes to make it possible for someone almost anywhere to shop and cook on any old weeknight
Shirley O. Corriher CookWise: The Hows & Whys of Successful Cooking, The Secrets of Cooking Revealed (1997)
A unique combination of basic cooking know-how, excellent recipes--from apple pie to beurre blanc--and reference source. She makes the science of cooking entirely comprehensible, then livens it up with stories, such as when her first roast duck blew up because she overstuffed it and the fat from the bird caused it to expand beyond capacity

Dietmar Fercher, Andrea Karrer et al. Austrian Desserts and Pastries: 108 Classic Recipes
The book is great; Recipes in there are what my mom makes, what I make at home, etc; There are also lots of pictures and "technical" instructions on how to do things; Like how to pull Strudel dough;
